Gelatin is usually made from collagen in cow or pig bones, hooves, and connective tissues. It is produced by boiling the connective tissues, bones and skins of animals, usually cows and pigs. It is also made from the hooves of cow.

Gelatin's ability to form strong, transparent gels and flexible films that are easily digested, soluble in hot water, and capable of forming a positive binding action have made it a valuable commodity in food processing. When placed in liquid, the molecules swell and then dissolve, and the chains separate. After cooling, they re-form as tightly as before. Gelatin works as a thickening agent for foods. Gelatin helps in gel formation, water binding, thickening, texturising, Improvement of the whipping and melting properties of ice cream. Due to these properties, it is widely used in bakery, desserts, wine, dairy products.

Unbelievable !
When I first read your article about Jello/Gelatin ingredients I could not believe it. So I went ahead and did some self research, and found your findings true. All I can hope is that they use the vegetarian version of Gelatin and not the regular non-vegetarian ingredients. Good job girl, I think your article helped me to become much more aware about the food I eat.
