Filter coffee - Don't skip the sip! Brewing a perfect Madras kaapi

The perfect day begins with a sip of delicious 'coffee' accompanied by 'The Hindu' newspaper. Well, though not with the crisp edition, now it is with the website thehindu.com and by coffee I mean, the perfect South Indian filter coffee. Filter coffee is adored by people in India, specially in Tamil Nadu and Karnataka. It is also known as degree coffee, because of thick good quality milk and fresh brewed decotion (first degree). Brazil is the largest producer of coffee beans. In India, coffee beans are grown in the states of Karnataka, Tamilnadu and kerala.


Filter coffee is a 'Good morning drink' for most south Indians. Though not an addict to coffee, a cup of satisfying taste in the morning and evening would just be fine. No doubt sipping a strong cup of filter coffee can help do away with drowsiness. When ever we get visitors at home, it is a custom to offer them a cup of coffee. Both my father and father-in-law, makes freshly brewed filter coffee everyday for everyone in their house. It is intriguing that most men at home has mastered this art. Perhaps, it is because they are the one's to wake up first and cannot wait patiently until the house chef gets in. :-)

Brewing perfect coffee
The quality of the filter coffee starts right from the process of buying the coffee bean powder. Though the coffee filter, is replaced by modern kitchen appliance coffee maker, the good old stainless steel coffee filter is pretty good too. The decotion brewed fresh every morning will give a rich taste. The consistency of decotion really matters for the taste. You need to first boil the milk, then add right amount of sugar may be little less sugar so that the coffee taste predominates. Then add the decotion. Do not boil the coffee after adding decotion as it ruins the taste. I usually don't follow any ratio for milk and decotion. For me it is just the creamy golden color that qualifies the taste. The qualities of a perfect coffee would be the strong, yet milky coffee with creamy golden color, quiet hot, fulsome flavour that lingers after taste.

Filter coffee stands forth the instant and other espresso coffees
Though there are several instant coffee brands like Nescafe, Bru etc, it is this "filter or degree kapi" that steals the show. I sure miss this in the menu of the popular coffee chains like 'Starbucks'. It is surprising that even the popular coffee bar's in Chennai, like barista, qwiky's, cafe coffee day, does not have Madras filter coffee in its menu. It is a safe bet that if this kaapi comes up in the menu, it will hold its froth in a sea of latte. I would really suggest people going on a trip to India to taste this divine, relishing "Filter coffee". Living in California, I am happy that I get the popular coffee powder brands like 'Narasus coffee' and 'cothas coffee' here. Thanks to the exporters!

Drink in moderation
It is not that coffee is a bad drink and should be avoided at all costs. But it is important that you drink it in moderation. Every form of addiction is bad. May be not more than 2 small cups(regular one's used in India). I was really surprised by the size of coffee cups outside India. I think what they say 'small size' here in US will hold good for 2 persons.

So anytime if you are offered an authentic filter coffee, make sure you don't skip the sip!
