A prominent feature of Indian cuisine is the liberal use of aromatic fresh herbs. Dishes are seasoned with spices like cumin, cardamom, cloves, cinnamon and nutmeg and with leafy herbs like coriander, mint and last but not the least curry leaves. Curry leaf is an essential ingredient of most dishes cooked in South India and also in other parts of India like Gujarat, Maharashtra and Orissa. The mouth watering aroma of fried curry leaves envelopes you as you step inside a South Indian restaurant. Curry leaves are a vital part of South Indian dishes like Dosa, Idli, Sambhar-vada and coconut chutney. Gujarati dishes like Dhokla and Khandavi and Marathi dishes like Poha and Upma make use of curry leaves too. Curry leaves or ‘curry patta' as it is called in Hindi are small leaves, deep green in color. The leaves are a pinnate with 10/20 leaflets. They belong to citrus family and grow in tropical climate. It is a tree about 4-6 m tall and 40 cm in diameter. When a fresh green curry leaf is rubbed between fingers it gives out a unique aroma. Usually fresh curry leaves are used for cooking but dried up curry leaves can also be used. Curry leaves can be washed and dried in shade and stored in air tight containers, as they still retain their flavor. Goodness of curry leaves Curry leaves have medicinal value, which make them so special. 1. Curry leaves have minerals and vitamin A and B and are a rich source of Carbohydrates, proteins and amino acids. 2. Bark of curry tree is useful in curing Leucoderma and blood disorders. 3. Curry leaves are good for people suffering from diabetes. 4. Paste of curry leaves can be applied over burns and bruises as it is known to have antimicrobial and anti inflammatory properties. 5. Curry leaves lower down cholesterol level in the body (anti-hypercholesterolemia property) 6. Curry leaves prevent hair loss and early graying of hair. Heat coconut oil with a handful of curry leaves till they turn black and cool the oil. Use this as hair oil 2-3 times a week. 7. A teaspoon of curry patta juice when mixed with a teaspoon of lemon juice or honey relieves nausea. 8. Curry leaves improve digestion. Powder of curry patta and cumin seeds when taken with buttermilk, empty stomach, improves digestion. Recipe A recipe of Gujarati dish Khandavi, which is garnished with curry leaves. Ingredients 1. 1 cup besan (gram flour) 2. 1 cup curd 3. 1cup water 4. a pinch of asafoetida 5. ½ inch ginger 6. ½ teaspoonful of turmeric 7. 2 green chillis 8. Coconut (grated) 9. Black mustard seeds Take a small container and mix besan, curd and water in it. Whip it well in order to avoid lump formation. To the batter, add asafoetida, turmeric powder, ginger and chilli paste and salt to taste. Put a glass of water in the pressure cooker. Now place the container over water and close pressure cooker with the gasket but no weight. Steam cook for 15 minutes. Take the container out of the pressure cooker and whip the batter well. With a spoon quickly spread the batter over greased plates (greased with cooking oil), so that it makes a thin layer over the plates. Add raw grated coconut over the layer when it dries up and roll it out. Cut the Khandavi rolls into 2 inch pieces. Garnishing In a pan, heat 2 tablespoonful of cooking oil. Add black mustard seeds and curry leaves. Use this for garnishing Khandavi. Also sprinkle some red chilli powder to add flavor and color to the dish. Curry tree has amazing qualities. Think of having one in the vicinity of your house. Every time you come across a curry leaf in some dish don't nudge it aside….consume it for better health!!!
